Serves 2
Ingredients:

  • 3 small or 2 larger Moreton Bay Bugs (green) cut in half lengthways and cleaned

Dressing Ingredients:

  • ½ tablespoon lemon zest
  • ½ tablespoon lime zest
  • ½ tablespoon orange zest
  • 2 tablespoon light soy sauce
  • 1 tablespoon ketchup manis
  • 1 tablespoon honey
  • ½ cup of orange juice (freshly squeezed)
  • 1 tablespoon eschallots finely chopped

Method

  • Combine all dressing ingredients
  • Place bugs cut side up on grilling tray
  • Spoon over combined dressing and grill for approximately 3 – 4 minutes or until cooked
  • Serve with steamed jasmine rice and fresh garden salad
