Citrus Bugs
Serves 2
Ingredients:
- 3 small or 2 larger Moreton Bay Bugs (green) cut in half lengthways and cleaned
Dressing Ingredients:
- ½ tablespoon lemon zest
- ½ tablespoon lime zest
- ½ tablespoon orange zest
- 2 tablespoon light soy sauce
- 1 tablespoon ketchup manis
- 1 tablespoon honey
- ½ cup of orange juice (freshly squeezed)
- 1 tablespoon eschallots finely chopped
Method
- Combine all dressing ingredients
- Place bugs cut side up on grilling tray
- Spoon over combined dressing and grill for approximately 3 – 4 minutes or until cooked
- Serve with steamed jasmine rice and fresh garden salad
